Peanut Butter Stuffed Chocolate Dipped Bugles

Yep...that is right.
24 baby!
I am beyond excited!
I love me some Jack, and having Chloe back just makes
the world a better place!
Actually, I made these last week, but have not had
time to post them yet, mainly because, well, I did
not know what to write in the post.
See...these are crazy easy, no real recipe per se,
and well I have been racking my brain, trying
to think of a "story" to tie in with Bugles.
Since I heard the news about 24, I thought I would
talk about it, cause I am super nerdy, and only
a twisted mind like mine would think,
"Hey, 24 is back, sound the bugles"
Did you catch that?
Yep...lame.
But oh well, I get to share this
super easy treat.
I grabbed a bag of Bugles, sorted out the "good" ones, by
good ones, I mean the ones that all whole, with a hole to fill.
I then put some peanut butter in a piping bag, or a sandwich bag,
would work too.  I then filled the bugles, and then dipped them
in melted almond bark, chocolate would work too.
I placed them on a wax paper lined cookie sheet and
sprinkled them with sprinkles, because sprinkles make
everything better.
Jack told me that.
"Dammit Kim, I need those Sprinkles, NOW"
HEHEHE.
Yep....I am a cornball.
So...sound the Bugles...24 is back baby!

Chocolate Peanut Butter Cereal Bars





Confession time.  Don't judge me, ok?

I can not make Rice Krispie Treats.  There...I said it!

My name is Kim, and I can not make Rice Krispie Treats!

Is there a group for that?  Where you stand up and make your confession...

:"Hi, My name is Kim......and I can not make Rice Krispie Treats."

"Hi Kim"

Ok...I don't know what the problem is.  They always come out either one of two ways...they are either
rock hard....or...they are so soft that you have to eat them with a spoon.

But never fear....I found a solution.  If you are like me and all "I can not make Rice Krispie Treats" like me.  I can hook you up.


I found this recipe in the Better Homes and Garden New Cook book that I got when I got married.  I am not sure why I have never found it before...but it is life changing.  Now I can make Krispie treats.  I changed it up a little and used Jiff Whipped Chocolate Peanut butter, but I am sure regular peanut butter would be great...or Nutella....or Biscoff....or maybe marshmallow cream...YUMMY!

Chocolate Peanut Butter Cereal Bars
Printable Version

2/3 cup light corn syrup
1/4 cup packed brown sugar
1 cup peanut butter, I used Jif Whipped Chocolate Peanut butter
1/2 teaspoon vanilla
4 cups Crisp Rice Cereal
Place Rice Cereal in a medium bowl, set aside.
In a medium sauce pan, bring corn syrup and brown sugar to a boil. 
 Remove from heat, and stir in peanut butter and vanilla. 
 Pour over Rice Cereal and stir to coat. 
Press  firmly into a 9x13 pan that has been lined with waxed paper. 
 Chill for 1 hour, cut into squares and enjoy.

Chocolate Mint Bars




The Holiday Season can be all kinds of crazy for
everyone.

I am no exception.

I work full time, try to manage a house,
have a Husband, Special Needs Son,
two crazy dogs and an aquatic turtle.

When I bake, I need to be quick, and simple.

These bars fit the bill perfectly.

You can whip them up in like 5 minutes,
and have a delicious treat for the family,
to take to a Christmas Party, or give as a
gift.



A cake mix, some mint chocolate chips and a
few other kitchen samples, and you are done!



When I decided to make these last weekend,
I planned on using a chocolate cake mix,
but sadly I did not have one, so I used a yellow cake mix,
and added some cocoa powder and some brown sugar.

The result was a think, soft and delicious almost
cake like bar.  You could also put some icing on them
and call it a snake cake.

What ever floats your boat, I will not judge.

Just make them, they will make you smile!

Here is a quick tip that I always do when baking bars,
I line my pan with aluminum foil before baking.
When done baking and completely cooled, simply lift the
bars out of the pan, and cut squares  with a bench scraper.
The result is perfectly cut bars that look great on a
platter and are sure to wow your recipient.
As a bonus, the pan is completely clean! 
Bonus points right there!







Chocolate Mint Bars 
The Cookie Puzzle


1 Yellow Cake mix
1/4 cup cocoa (I used Hershey's Special Dark)
1/4 cup brown sugar
2 eggs
1/4 cup butter, melted
1/4 cup water
1 package Nestle Dark Chocolate Mint Chocolate Chips
 
Preheat oven to 375 degrees
Spray 9x13 cake pan with Non-stick spray or line with foil.
 
In the bowl of a stand mixer, combine, cake mix, cocoa, brown sugar, eggs, butter, and water.
Mix on low until combined.  Turn mixer to medium and beat for 2 minutes.  Gently stir in chocolate mint chips.  Bake for 23-25 minutes or until toothpick inserted into center comes out clean.  Cool completely, cut into bars.

Chocolate Goober Bars

What up Cookie Peeps?
Today...I am going to share something
a little different with you.
Chocolate Goober Bars!
Doesn't that name just sound yummy?
I grew up on these,
my mom made them when I
growing up ALL THE TIME!

I still call her,
begging her to make them for me.
Finally, she gave me the
the recipe a few years ago,
and since I love you all
I will share it with you.
These are super simple to whip up.
Make a large amount.
Are a real crowd favorite
and...
are crazy yummy!


I hope you enjoy these as much as I do.


Chocolate Goober Bars


Prep Time: 5-10 minutes
Cook Time: 20-25
Ingredients (48 bars)
  • 1 box Devil’s Food Cake Mix
  • ½ cup firmly packed brown sugar
  • ⅓ cup peanut butter
  • ¼ cup butter, softened
  • ½ cup milk
  • 1 egg
  • ½ cup chopped salted peanuts
Instructions
Heat oven to 325. Grease bottom only of a 17 ½ by 11 ½ lipped cookie sheet (jelly roll pan or half sheet pan). In a large bowl, combine cake mix, brown sugar, peanut butter and butter at low speed until crumbly. Add milk and egg, stir until blended. Spread into prepared pan, sprinkle peanuts onto batter, and press nuts into mixture.
Bake at 325 for 20-25 minutes, until set. Cool completely, cut into bars.

*This is a really thick batter, at first look, it appears that the batter will not cover the bottom of the pan, but trust me, it will, I find using the leftover wrapper from the butter, works really well, to smooth the batter, into an even layer into the pan.*
